Peanut Butter Cookies

easy, gluten-free, 3-ingredient peanut butter cookies

Hello all! Kay here with a SUPER easy cookies recipe that you can make in less than thirty minutes.

These cookies are reminiscent of the cookies I remember eating in school. Nothing fancy. Just simple and delicious.

No flour. No gluten. No hassle.

These cookies only require creamy peanut butter, granulated white sugar, and an egg.

That’s right, NO flour. Which means that these cookies are indeed gluten-free.

(I added some honey crumbles to the rolling sugar and an extra sprinkle to finish as a bonus ingredient.)

Electric mixer or by hand?

Peanut butter isn’t always the easiest to mix by hand, so feel free to use an electric or stand mixer.

I heat my peanut butter in the microwave using the defrost setting for about 15 seconds to loosen it a little, and then continue to mix by hand. (A lot of the time, I’d just rather not go through the trouble of cleaning the mixer or attachments lol.) Also it limits the chance of over mixing!

Feel free to experiment with various sugars, toppings, and even fillings for these cookies!

(Just remember not to over-bake.)
