Spiced Maple Nut Muffins (sugar free)

cinnamon, maple, pecans, made with organic stevia and almond milk

 I’m still reeling off the euphoria of launching our bakery blog! It had been in discussions between Kay and me for a while, but it wasn’t until we decided to step away from baking for our customers (darn you, COVID-19) that the blog became our main focus. Talk about making lemonade with lemons…


So, last week Kay showed her awesome technique in making Blueberry jam and Blueberry Coffee Cake Muffins, I thought I’d share a muffin recipe without regular sugar or regular milk! 


Why?


I like to test out baking with alternative ingredients when I can. For this muffin recipe, I chose organic stevia and unsweetened almond milk. We have loved ones with different dietary restrictions and I’m sure you know some as well! When we began pop-ups at markets, we met people that had different dietary restrictions, but still desperately wanted sweets! Since then we’ve made gluten-free, sugar-free, and ketogenic friendly treats for our customers.

Now, on to the recipe. It’s got cinnamon, pecans, and a hint of maple. If you don’t like or have maple extract on hand, add vanilla extract. Also, you won’t need a mixer for this recipe. 


Important note: this recipe is made with stevia, a sugar alternative. Stevia is 2x sweeter than sugar. Here’s an example:

1 cup sugar = ½ cup stevia 


If you’d like to try this recipe with sugar instead of stevia, just double the amount You can also use regular milk if you’d like. Happy Baking! - Ann
